Celebrations are in order because we've finally managed to get our green coffee range back to normal. All our coffees are now current crop and the geographical diversity is now returned to where it was.

The last bit of the puzzle was getting hold of a decent Nicaraguan coffee, and we managed to find an absolutely excellent one. The green coffee is a mix of varietals, but all large beans and with a substantial (to my eyes and tastebuds) Maragogype component.

Nicaragua Sultan

$60 Per Kilogram

Medium

Sweet high-acid coffee with vibrant, mouth-filling flavour balanced with good body and a smooth, tangy aftertaste. The lighter roast is most suited to plunger or filter brewing.

Having finally managed to get hold of a coffee that's at least Maragogype-adjacent, we've been having a little play with it, trying it at the darker roast level we used to use for Colombian Maragogype. It's not quite the same; for those that remember the Colombian beans were huge and had a fairly high oil content. Alas, these beans are generally smaller and drier. Still, the end result is not a long way away from the original, at least as far as taste is concerned. We only have a teensy amount which we snuck into our normal roasting schedule, as our roasting time window is still in lockdown mode.

Nicaragua Sultan Dark
from A$16.00

$56 Per Kilogram

Strong

Strong, well balanced flavour, aroma and acidity and a rounded body. A great after-dinner coffee.

Note that the amount available is very limited and will probably sell out quickly. Before we get to the end of the pandemic, lockdowns and similar obstacles we'll be restricted to very tight roasting conditions. It's my fervent hope that all of you stay safe and healthy as we slowly approach that goal.

Until next month,

Alan
